It's easy to manage as opposed to a menu of 50 items all with their own special ingredients and preparation requirements.

I learned recently that it was Gordon Ramsay that actually decided to stop doing kitchen nightmares in the US and UK, because the people never stuck with his advice and ended up closing as a result.
A lot of the restaurants were in so much debt that even when they did stick to his advice it was too little too late unfortunately but there are some success stories he can be proud of.

I give Rico props for being one of a number of (co?)owners that were totally honest with Gordon about how screwed they had gotten because of their restaurant.
